ONE POT POTATO DISH

There is always something we can all relate to and still be able to make it our own in different ways just like this one pot potato dish. I promise you once you master the process, you will always find more ideas to add to this dish while keeping it delicious. Don’t hesitate to throw in a couple of your favorite veggies. You will always get a WIN!


INGREDIENTS:

- Gemstone Medley Baby Potatoes

- Veggies (Petite Carrots, Mushrooms, Celery, Red Onions, Green Onions, Bell Pepper, Cherry Tomatoes, Red Chili Peppers)

- Olive Oil

- Butter

- Seasonings (Paprika, Chili Powder, Ground Cumin, Ground Pepper, Garlic Powder, Parsley Flakes, Salt)


DIRECTIONS:

1. Wash-clean your potatoes and add them to your pot with just enough water to cover them.

2. Now boil them for about 8-10 minutes on medium-high or until ready. Do not wait until they are too cooked.

3. While the potatoes are boiling, prepare your veggies. You can cut mushrooms and tomatoes in half and others in small pieces. There is no need to cut your petite carrots.

4. Once the potatoes have cooked, drain the remaining water, serve and set aside. 

5. Now turn your heat to medium and in the same pot add 2tsp of olive oil. Once ready, add your veggies in this order; red onions then carrots and cover for about 2-3 minutes then add your celery, mushrooms, bell peppers and chili peppers.

6. Add 1/4 cup of water and let it simmer until it drains.

7. Now add your tomatoes and seasonings then stir for about 1 minute.

8. Now add 2tsp of butter, once melted go ahead and add your green onions.

9. Now add your potatoes. Mix all together until nice and ready.
