PEANUT BUTTER CHICKEN DRUMSTICKS

Whenever you attempt this recipe, you will be amazed by by the simplicity of cooking delicious peanut butter drumsticks. The best part? They can be paired with rice, potatoes, and numerous other options. Both you and your family are sure to enjoy them enthusiastically!
INGREDIENTS:
- Chicken Drumsticks
- Peanut Butter
- Tomato Paste
- Vegetable Oil
- Chicken/Beef Stock
- Veggies 1/2(onion, bell pepper)
- Seasonings 1tsp(ground cumin, paprika, chili powder, chicken seasoning)
- Crushed red pepper and ground pepper as needed
- Salt as needed
DIRECTIONS:
1. Clean your chicken and dry it from any moisture. You can remove the skin as I did in this recipe and your chicken will still be delicious and flavorful.
2. In a bowl, mix all your seasonings with 2tbsp of vegetable oil and stir well.
3. Now season your drumsticks throughly.
4. Turn on your stove to medium high heat and in your pan add 1tbsp of vegetable oil. Let it heat to medium temperature.
5. Add the chicken in the pan to cook and keep turning all sides to cook evenly then cover. They should be cooked in approximately 20 minutes. Once cooked serve and set aside.
7. In the same pan, add 1tbsp of vegetable oil then your chopped veggies and let them caramelize.
8. Add 3tbsp of peanut butter, 1tbsp of tomato paste, 1/2cup of chicken broth and then mix well until you have a nice and thick sauce (you can add more of these ingredients for desired thickness).
9. Now that the sauce is ready you can toss in your drumsticks to coat or serve the sauce as a dressing.
